The Food Safety Modernization Act (FSMA) is a comprehensive piece of legislation that significantly impacts the food industry. To comply with FSMA, food manufacturers must implement various measures, including: 1. Preventive Controls: Develop and implement a written Food Safety Plan (FSP) that outlines preventive controls for biological, chemical, and physical hazards. This includes conducting a hazard analysis, identifying critical control points (CCPs), establishing critical limits, monitoring procedures, corrective actions, verification procedures, and record-keeping. 1 2. Supply Chain Management: Implement a robust supply chain management program to ensure that suppliers are meeting food safety standards. This may involve conducting supplier verification activities, such as audits and inspections, and reviewing supplier documentation. 3. Recall Plans: Develop and implement a comprehensive recall plan that outlines the steps to be taken in the event of a product recall. This includes identifying key personnel, establishing communication channels, and developing procedures for product tracing and recall notification. 4. Foreign Supplier Verification Program (FSVP): For imported foods, develop and implement an FSVP to ensure that foreign suppliers are meeting food safety standards. This may involve conducting supplier verification activities, reviewing supplier documentation, and taking corrective actions as needed. 5. Sanitary Transportation: Implement sanitary transportation practices to protect food from contamination during transportation. This may involve cleaning and sanitizing transportation vehicles, maintaining proper temperature control, and preventing cross-contamination.
